Salad:
10 oz. fresh spinach
1 small head lettuce
1 cup mandarin oranges
1/2 cup red onion, finely chopped
1/4 cup almonds, slivered
1 tbsp. sugar

Dressing:
1/4 cup oil
2 tbsp. sugar
1 tbsp. vinegar
1 tbsp. parsley
salt and pepper to taste

Directions:
Directions:
Clean spinach and lettuce and combine in a bowl with the oranges and red onion. Mix the ingredients for the dressing together with a wire whisk and toss with the salad. In a heavy skillet, cook the almonds and sugar together until the almonds are coated. It takes about a minute or so. Ad the almonds to the salad and toss.
