5 medium sized ripe tomatoes, diced (1 1/2 lbs)
1 medium red onion, chopped
1 garlic clove, put through a press
3/4 cup shredded fresh basil
1 cup chopped parsley
1/3 cup coarsely crumbled feta cheese
3 Tbs extra virgin olive oil
2 tsp balsamic vinegar
salt and pepper to taste
1 pound fettuccine
1/4 cup chopped black olives, preferably oil-cured (optional)

Directions:
Directions:
Combine all except fettuccine. Cook fettuccine al dente and add to tomatoes. Top with olives, if desired. Serve warm, cold or at room temperature. Serves 8
