1 1/2 c. sugar
1 Tbsp. butter or margarine
4 Tbsp. cornstarch
1/4 tsp. red food color (optional)
3/4 c. juice from cherries
1/4 tsp. almond extract (optional)
2 cans(16 oz. ea.) Oregon Brand Pitted Red tart Pie cherries
Pastry for two-crust, 9" Pie

Directions:

Preheat oven to 400. Combine the sugar and cornstarch in saucepan. Stir in juice. Cook over medium heat until thick and bubbly, stirring constantly. Cook one minute more. Remove from heat and stir in remaining ingredients except pastry. Fill bottom crust with filling, cover with top crust, seal edges and cut slits in top to allow steam to escape. Bake for 45-55 mins., covering edges with aluminum foil during baking to prevent over-browning.
