1 lg. can tomatoes
1 sm can tomatoe puree
2 medium onions chopped fine
small piece salt pork - chopped fine
2 tablespoons bacon drippings
2 pork chops or small piece pork
4 tsp. garlic
1/4 tsp. ground thyme
salt and pepper to taste
sugar
wine (any thing that you can drink)
1 can tomato paste

Directions:
Directions:
Melt bacon fat in large sauce pan with salt pork along with onions and piece of meat. Cook until onions have almost dissolved and meat is well braised. Add remaining ingredients except puree and paste. Let cook for 1 hour on low, stirring occasionally. Then add puree and paste, let cook for 1 more hour and continue to stir every 15 minutes.

Always have a loaf of bread next to the stove. The only way to test the sauce is to dip the bread into it while it is cooking.
