1 1/2 c. cooked or canned pumpkin
3/4 c. sugar
1/2 tsp. salt
1/2 to 1* tsp.ginger
1/4 to 1/2* tsp. nutmeg
1/4 to 1/2* tsp. ground cloves
1 to 1 1/4* tsp. cinnamon
3 slightly beaten eggs
1 (6 oz) can evaporated milk (3/4 c.)
1 c. milk
1/2 recipe plain pastry

Directions:
Combine pumpkin, sugar, salt and spices; blend. Add eggs and milk. Mix thoroughly. Pour into 9-inch pie pan. Bake in hot oven (450) for 10 min. then in a moderate oven (325) about 50 min., until mixture doesn't adhere to a knife.

* Note variation in spice; with the first measure you get a golden mildly spiced pumpkin pie. With the starred measure you get a more richly spiced pumpkin pie.
