6 large russet potatoes
1 large onion
3(14 oz.) cans chicken broth with roasted garlic
1/4 cup butter
21/2 tsp salt
1 cup half and half
1 cup shredded cheddar cheese
3 cups chopped chives
8 oz sour cream optional
4 bacon slices cooked and crumbled
shredded cheese

combine first 6 ingredients in 5 quart slow cooker
cover and cook on high for4 hours or8 on low heat or until potato is tender
mash mixture until potato are cousely chopped and soup is lightly thickened stir in cream cheese and chives. top with sour cream if desired,sprinkle with cheddar cheese and bacon
