4 1/2 c flour
1 1/2 tsp. salt
3 c sugar
1 T baking soda
3 c yams, cooked/pureed
1 1/2 c vegetable oil
6 large eggs, beaten
3/4 tsp. nutmeg
3/4 tsp. cinnamon
3/4 tsp. apple pie spice
3 c apples, peeled and chopped small
2 c pecans, chopped

Directions:
Directions:
Sift first 4 ingredients together. Mix yams, oil, eggs and spices. Combine with flour mixture--do not overmix. Stir in apples and pecans. Pour into well greased loaf pans or 36 muffin cups. Bake loaves 350 for 60-70 minutes. Muffins for 20-25 minutes. Cool for several hours before slicing.
