1/2 cup butter
6 T flour
1 qt. rich milk
2 cups grated American cheese
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1/2 cup shredded carrots
2 cups chicken stock (broth OK)
3 T. butter

Directions:
Directions:
Melt 1/2 cup butter. Add flour, blending well. Add milk all at once stirring constantly. Bring to a boil. Add cheese. Remove from heat but keep warm. Melt 3 T butter an another pan. Add celery, green pepper, onion, and carrot. Saute to light brown. Add stock and mix well. Combine 2 mixes and reheat.
