1/2 c. vegetable oil

1 1/2 c. sugar

2 eggs

1 c. canned pumpkin

1/3 c. water

1 3/4 c. flour

1/4 t. baking powder

1 t. baking soda

1/2 t. salt

1/2 t. allspice

1/2 t. cinnamon

1/2 t. nutmeg

1/2 t. ground ginger

Directions:
Mix oil, eggs and sugar. Add pumpkin and mix. Add water and mix. Sift flour and measure, then sift again with other dry ingredients. Combine wet and dry ingredients. Mix well. Bake muffins at 350 for 20 minutes. We like them plain but alot of people like them with cream cheese frosting. We always double the batch because they are so moist and yummy that we cant stop eating them. :) They also take good with turkey dinner!
