2 large cucumbers, peeled
5 Roma tomatoes
Lemon Juice
Olive oil
Salt and pepper
Dried or fresh mint
1/2 red onion

Directions:
Directions:
Chop the cucumber, tomato and onion and mix in serving bowl
Add olive oil, lemon juice, salt pepper to taste and 1 teaspoon dried mint or 2 teaspoons fresh mint
