1 cup shredded raw carrots (2 large)
1 cup shredded pared raw potato (large)
1/3 cup finely chopped onion
1/2 cup milk
1/2 cup unsifted all- purpose flour
2 eggs, slightly beaten
1 tsp. salt
2 Tbsp. vegetable oil

Directions:
Directions:
Combine in bowl the shredded carrots, potato and onion. Add remaining ingredients and mix well. Spread vegetable oil on griddle. Drop batter by Tbsp. on hot, greased griddle. Spread to form a 3-inch circle. Cook until brown, turning once. Serve with honey, applesauce or sugar.
