1 10 oz pkg frozen chopped spinach
2 tbsp flour
2 beaten eggs
1 3-oz pkg cream cheese, cubed
3/4 c Velveeta cheese, cubed
1/4 c butter, cubed
1 tsp instant minced onion
tsp salt
cup fine bread crumbs
cup butter (for topping)
1/3 cup Parmesan or Romano cheese

Directions:
Directions:
In a 1 quart covered dish cook spinach on high for 6 minutes in the microwave, stirring half way through,
Drain, stir in flour, eggs, cheeses, butter, onion and salt. Mix well and cook on high for 9 to 11 minutes, stirring twice at 3 min intervals. Remove from microwave
Measure breadcrumbs into a medium cup add butter. Heat on high in the microwave until the butter melts (1 minute), then stir until crumbs are well coated with butter. Sprinkle mixture over spinach, and top with Parmesan or Romano cheese.
Brown in a regular oven for a few minutes before serving.
