4 cups cut up rhubarb
1 cup sugar
2 tbsp. shortening
1/3 cup sugar
1/2 tsp. vanilla
1 egg, beaten fluffy
1 cup flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/3 cup milk

Directions:
Directions:
Toss together rhubarb and 1 cup of sugar and place in the bottom of a greased baking dish.

Cream together the shortening and sugar. Add the vanilla and the beaten egg, mixing well. Gradually add the rest of the ingredients, mixing well. Pour the mixture over the rhubarb, and use a spatula to spread it across the top. Bake at 350 for about 30 minutes.
