30 lb ground pork
1 c paprika
1/2 c cayenne
1/2 c chillies
1/2 c salt
Red wine
Sausage casings for 30 lb sausage meat

Directions:
Directions:
Carefully measure out all dry ingredients, and have red wine ready to go. Mix the pork in 30 lb lots. Flatten with hands, add half of spices and wine, flip meat and add rest of spices and wine. Mix meat and ingredients extremely well. Cook small amount to ensure taste is correct prior to making up sausages. Use sausage machine or form in to patties. Sausages can be frozen.
