1 can cream of chicken soup (or substitute cream of mushroom)
1 carrot grated
1/4 cup chopped onion
3-4 zucchinis depending on size
1 cup grated cheese (more if you like)
1/2 cup sour cream
1 box Stove Top stuffing (6 oz chicken)

Directions:

Cook up zucchini and stuffing. Combine with remaining ingredients in 9x13 pan. Fold all together, top with grated cheese. Bake at 350 for 25-30 minutes

For store bought zucchinis in the winter, we use 4. The home grown "big" zucchinis (like 12" long and generous circumference) - 1 is enough.
