5 Tbs reduced calorie mayonnaise
1 Tbs cider vinegar
1/4 tsp fresh ground black pepper
4 cups broccoli florets
4 cups cauliflower florets
2 carrots, shredded
1/2 cup red onion, chopped

Directions:

Combine mayo, vinegar and pepper in a large bowl. Add veggies and toss to coat. Makes 8 servings
