2 hearty or 3 serving each loin depending on size

1 1Ĺ - 2 pound pork tenderloin
2 TBL olive oil
2 TBL fresh chopped Rosemary
3 TBL fresh minced garlic
Sea salt and ground pepper

Be creative, with the spices, Dijon mustard and many other fresh herbs are a good addition to this marinade.

An instant read thermometer is a must in every kitchen! Remember it has a plastic face and is not intended to be left in the meat in the oven.

Several hours or a day before serving rub pork with oil and spices, cover and refrigerate. Bring to room temperature before cooking.

To BAR B Q , Clean and spray grill with cooking spray, heat Gas Bar B Q to high. Place pork in middle of grill and turn heat down to Med. Close lid. Turn every 5-7 minutes, for about 15 - 20 minutes until internal temperature reaches 150- 160 degrees in thickest part of meat. YES 15-20 minutes, it is a small cut of meat and it will cook as it rests. You donít want it dry. Let it rest loosely covered with foil on platter 5 minutes before carving.

OVEN DIRECTIONS: Heat oven to 400, On stove top, sear meat on Med. High in 1 TBL oil in oven proof frying pan, rolling often to brown, about 5 minutes. Put pan in oven and turn down to 325 and roast about 15 - 20 minutes, until instant read thermometer inserted in center of meat reads 150 -160. Let rest about 5 minutes before serving.
