1/3 c. chopped celery 2 c. milk 1/3 c. chopped onion salt & pepper to taste 2 TB. butter dash of paprika 4 c. peeled and diced potatoes 2 c. shredded sharp cheddar cheese 3 c. chicken broth french fried onion rings
Saute celery and onions in butter. Add potatoes and broth; simmer until tender. Puree in blender until smooth. Return to sauce pan. Stir in milk and seasonings. Heat thoroughly. Add cheese; stir until melted. Garnish with the onion rings.
