6 oz. frozen coconut
3/4 c. sugar
1/4 c. cornstarch
1/8 tsp. salt
3 c. milk (I used big can of evap milk and add enough regular milk to give me 3 cups)
3 eggs, separated
1 1/2 tbsp. butter
1 tsp. vanilla

Directions:
Directions:
Prebake 2 regular pie shells. Heat sugar, cornstarch, milk and salt over low heat. Bring to a boil. Add egg yolks, butter, vanilla and coconut. Stir constantly to avoid scorching. Once thickened, pour into pie shell. Prepare meringue with egg whites and pour on top of pies. Bake in 350 until brown. Refrigerate leftovers.
