2 cups carrots (1 lb.)
1 cup cheddar cheese, shredded
1 Tbs. mayonnaise
1 Tbsp. yellow mustard
1/4 tsp. salt
1 tsp. sugar
cups chopped onion

Topping:
cup Ritz cracker crumbs
2 Tbsp. melted butter

Directions:
Directions:
Slice and cook carrots. Drain. Combine with cheese, mayonnaise, mustard, salt, sugar and onion. Place in a buttered medium size casserole dish.
Combine cracker crumbs and butter and sprinkle over the carrot mixture. Bake in a preheated 350 degree oven for 30 minutes.
