3 cups flour
1 1/2 cups sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

2 eggs
3/4 cup milk
2 tsp vanilla
1 cup butter

2 cups mashed banana
1 cup bran
1 cup chopped nuts (any type)
1 cup shredded coconut
1/2 cup chocolate chips (we use at least 1 cup)

Pre-heat oven to 350F. In large mixing bowl combine flour, sugar, baking powder, baking soda and salt
In a separate bowl mix together eggs, milk, vanilla and butter. Make a well in the dry ingredients, then pour in the egg mixture. Mix until blended, do not over mix. By hand gently fold in mashed banana, bran, nuts, coconut and chocolate chips. Pour batter into paper-lined muffin tins. Bake for 20-25 minutes. Makes 24 muffins
