1 lb beef round, cut into very thin strips
2 Tbs cooking oil
1 1/2 cups thinly sliced carrots
1 can (4 oz) mushroom slices, drain and reserve liquid
1/3 cup sliced scallions
1/2 tsp thyme leaves
2 Tbs flour
1 1/2 cups Burgundy
2/3 cup beef broth
1 1/2 tsp salt
1/4 tsp pepper
8 oz (7 1/2 cups) egg noodles

Directions:
Directions:
In a large skillet, brown meat in oil; remove and set aside. Saute carrots, mushrooms, scallions and thyme in drippings until carrot is crisp tender. Blend in flour. Add Burgundy, beef broth, reserved mushroom liquid and seasonings; cook stirring until thickened and smooth. Return meat to the pan; cover and simmer about 20 minutes or until tender. Meanwhile cook noodles according to package directions, drain. Serve beef over noodles.
