2 cups quartered cherry or grape tomatoes
10 large fresh basil leaves, chopped
2 tsp minced garlic
salt and pepper
2-3 lbs. peeled, deveined shrimp
Extra-virgin olive oil
1 cup heavy cream
1/2 c. grated Parmesan cheese

Directions:
Directions:
In a medium size bowl, combine the tomatoes, basil, garlic, salt and pepper. Set aside. In frying pan, saute shrimp with olive oil. Saute until browned, about 2 minutes. Add the tomato, basil, garlic mixture and saute until heated through. Slowly add the cream and Parmesan cheese. Reserve part of the Parmesan cheese to top dish once served.
