2 medium raw carrots, thinly sliced
1 head cabbage, shredded
1 lb lean ground beef or turkey
2 tablespoons onion flakes, or 1/2 cup fresh onion, chopped
1 1/2 cups tomato juice
1 tablespoon margarine or butter
Salt & pepper to taste

Directions:
Directions:
Broil ground meat and divide into small pieces. Place cabbage, meat, carrots, and onions in alternate layers in casserole dish (2 qt), beginning and ending with cabbage. Dot with margarine. Pour tomato juice over all and bake at 350 for 1 1/2 hours. If you would like to microwave instead, cook 15 minutes on high.
