Ingredients:  
6 - 10 potatoes peeled ,cooked and cooled, slice (or chunk)
1 green or red pepper (or both) diced or sliced
1/2 of red onion ( diced or sliced)
1 can of black olives drained and slice
1 bottle of Italian dressing ( or olive oil and vinegar)
pinch of salt and pepper
pinch of basil leaves ,or dill, or Italian seasons (dried or fresh )

Directions:

Mix all the above ingredients together . Poor some of the dressing at a time ( you may only use half of the bottle) Taste and serve.
This can be done the night before . You may need more dressing the next day.

This is from my mother- in-law. I watched her make it one day when I was dating Mike and loved it. I thought it was easy to make, which it is. I love this one because it doesn't have mayo in it and it can sit outside for awhile with out refrigeration.
