2 cups cooked sweet potatoes, mashed 2 1/2 cups flour 1/2 cup vegetable oil 1 tsp salt 1/2 cup sugar 3 tsp baking powder
Sift flour baking powder and salt together. Mix sugar, oil and warm mashed potatoes. Add flour mixture to potato mixture and knead lightly. Pat out to about 3/4 inch thick. Cut out 2 inch wide biscuits. Bake at 400ºF for 15 minutes, until light brown on the bottoms. Makes about 2 dozen.
