1 Tbs olive oil
1 clove garlic, minced
1/4 pound prosciutto
1 can (16oz) crushed tomatoes
1/4 tsp black pepper
2-3 Tbs grated Parmesan cheese
1/4 tsp hot pepper flakes
2/3 cup vodka
1 cup heavy cream or low fat sour cream
1 lb rigatoni pasta

Directions:
Directions:
Heat oil in a large skillet over medium heat. Saute garlic and prosciutto 1 minute. Add tomatoes, pepper, cheese and pepper flakes; simmer one-half hour. Add vodka; simmer 3 minutes. Add cream and simmer 15 minutes. Prepare rigatoni according to package directions and pour sauce over top. Sprinkle with additional Parmesan cheese. Makes about 6 servings.
