Caesar Salad Dressing

Recipe by Gavin Gray - Sous Chief

2 each egg yoke, separated
1 cup olive oil, extra virgin
4 pieces garlic bulbs, fresh
1 tea spoon dujon mustard
3 each anchovies, fillets
1 tea spoon lemon juice, fresh
1 table spoon Worcestershire sauce, prepared
2 table spoon vinegar, at room temperature
3 table spoon parmesan cheese, ground
4 whole peppercorns, crushed


Directions:
Directions:
Place the following in a blender:
Egg yoke, dujon mustard , crushed garlic, anchovy fillets, Worcestershire sauce, vinegar, parmesan cheese, and cracked pepper.

Blend till every thing is smooth, then slowly add the olive oil to the ingredience and then add the lemon juice.

Serving ideas : Pour the dressing over the prepared salad then toss.
