1 1/2 c. flour 1 apple, peeled and grated 1 c. bran 1/2 c. raisins 1 c. brown sugar 1/2 c. pecans 2 tsp. baking soda 1/4 c. coconut 2 tsp. cinnamon 1/2 c. vegetable oil 1 c. grated carrot 4 eggs (2 eggs + 2 egg whites)
Preheat oven to 400ºF. Combine flour, bran, brown sugar, soda, and cinnamon. Make well in center. Add carrot, apple, pecans, raisins, and coconut. Stir together until just moist. Do NOT beat. Add eggs and oil. Stir lightly. Bake 12 minutes
I used to eat these good bran muffins for breakfast every morning while I lived at Trinity. This summer I found this recipe. I double or triple the recipe and freeze them so I can take them to work for breakfast. Mmmm.
