2 1/2 c. flour
1/2 tsp. salt
1 tsp. sugar
2 1/4 tsp. regular instant yeast
1 c. warm water
3 T. unsalted butter, melted
pretzel salt (or whatever you have)

Directions:
Directions:
Preheat oven to 500. Line baking sheets with parchment paper. In a medium bowl, whisk flour, salt, sugar and yeast. Slowly add water. Transfer dough to a floured work surface and knead for five minutes until soft and smooth.
Dust the dough with flour and place in a plastic bag. Leave room for dough to expand and seal. Let rest for 30 minutes at room temperature.
Spray work surface with cooking spray. Transfer dough to work surface and divide it into eight equal pieces. Roll each piece into a long thin rope, 28 to 30 inches long. Twist each rope into a pretzel. Dip each pretzel in warm water. Place on prepared baking sheets. Sprinkle lightly with salt. Let rest, uncovered, for 10 minutes.
Bake until golden brown 8 to 9 minutes. Remove from oven and brush with melted butter. Serve warm.
