1 (7oz) can artichoke hearts, drained
1 (7oz) can olives, drained
1/2 c green onions, with tops included
1 (6-1/2 oz) jar roasted red peppers
1 lb cheese (Cheddar, Monterey Jack, Swiss, Muenster)
1 clove garlic, minced
3/4 tsp oregano or basil
1/3 c. Olive Oil
1/2 c. red wine vinegar
Salt and pepper to taste

Directions:
Quarter artichokes and olives, put in a jar with onions. Cut peppers into 1" squares, cheese into 1" cubes. Combine garlic, oregano or basil, oil, vinegar, salt and pepper in a jar. Shake well. Pour over items to be marinaded. Cover and shake. Refrigerate 3 hours (or overnight). Shake once each hour. Drain marinade. Set aside. Leave at room temperature 1 hour before serving. Transfer to serving bowl. Place marinade in small bowl. Serve with other items.
