1 c. flour
1/2 tsp. salt
1 c. milk
2 eggs
1 T. vegetable oil

Directions:
Directions:
Preheat oven to 425. Heavily grease muffin pans. Sift flour and salt into mixing bowl. Add milk, eggs, and oil. Beat at low speed. Pour batter into greased muffin pans about half full. Bake for 10 min. Reduce temperature to 375 and bake about 30 min. longer until golden brown. Poke each popover with a knife to let steam escape. Let popovers remain in oven about 5 min. longer to dry out the interior. Serve immediately. Yield: 6-8 popovers

The perfect popover should be irregular in shape; have a crisp, golden brown crust; and have an almost hollow interior.
