1-1/2 lb hamburger, browned
1/4 cup chopped onion
1/4 cup shredded carrots ( I sliced small instead)
1/4 cup diced celery
1 tsp dried basil
1 tsp dried parsley
3 cups chicken broth
4 cups cubed potatoes
4 tbsp butter
1/4 cup flour
1-1/2 c. milk
8 oz. Velveeta cheese
1/4 c. sour cream

Saute first 6 ingredients in 1 tbsp butter
Add broth and potatoes
Bring this all to a boil, 10 to 15 min. (until potatoes are fork tender)
In separate pan, cook 3 tbsp butter and 1/4 c. flour until golden.
Add to soup to thicken
Add milk, Velveeta Cheese
Salt and pepper to taste
Simmer until cheese has melted

Just before serving, add 1/4 c. sour cream
