1 Tbs butter
2 celery stalks, chopped
2 carrots, grated
2 cans chicken broth
1 1/2 cups cheddar cheese, grated
1 cup sour cream
3 (10 3/4 oz) cans condensed cream of potato soup
salt and pepper to taste
Hot pepper sauce, optional

Directions:
Directions:
In a large pan, melt butter and saute celery and carrots. Add chicken broth; simmer on low 20 minutes. Add potato soup, cheese and sour cream. Cook on medium-low heat for 15 minutes. Sour cream should NOT boil. Season to taste; add a few dashes of hot pepper sauce, if desired and enjoy.
