2 lbs. boneless, skinned chicken breasts
1 T. olive oil
2 medium onions, chopped
4 cloves garlic, minced
2 - 4 ounce cans chopped green chilies
2 tsp. ground cumin
1/4 tsp. ground red pepper
1 tsp. crushed oregano
3 - 15 ounce cans northern beans
4 cups chicken broth
1 - 20 ounce pkg. Mozzarella cheese
Sour cream

Boil chicken until done. Dice the meat and discard the water. Cook onions in oil until clear. Stir in garlic, chilies, cumin, red pepper, and oregano. Saute' for 2 to 3 minutes. Add chicken, beans, stock, and 3 cups of the mozzarella cheese. Let simmer for 15 minutes. Garnish with remaining cheese, sour cream and jalapeņos if desired.
