cup butter
cup chopped onion
cup chopped celery
cup chopped green pepper
1 clove garlic, minced
2 can (8 ounces each) tomato sauce
1 teaspoon salt
1/8 teaspoon pepper
1/8 to teaspoon chili powder
1 pound cooked shrimp, shelled, deveined and halved

3 cups cooked rice

Directions:

Melt butter in a saucepan over medium heat; add onion, celery, green pepper, and garlic and cook about 5 minutes. Turn burner down and add tomato sauce and seasonings and simmer, covered, about 10 minutes. Add shrimp and cook about 5 minutes longer. Serve immediately, bordered with rice. Yield: 4 servings.

Note: I use at least double the amount of celery and green peppers. Be sure to follow the recipe times, and it will turn out great! If you use pre-cooked shrimp, put it in a colander while you are cooking the sauce. Run cold water over to thaw the shrimp. When you put the shrimp in, heat it gently. If you cook it too long on high heat, it will get tough. Enjoy!!
