4 eggs
2 c. sugar
1 c. salad oil
2 c. all purpose flour
2 tsp. soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. can pumpkin
Icing
1 - 3oz. pkg cream cheese
1 - stick butter (room temp.)
1 - 1 lb. box confection sugar
1 tsp.vanilla

Directions:
Directions:
Beat the eggs and sugar together until well blended. Add oil continuing to beat. Sift or stir the dry ingredients together and beat them into the egg mixture. Add pumpkin, mix well. Pour into buttered tube pan. Bake at 350 oven for 55 min or until toothpick comes out clean.

Icing

Bring cream cheese and butter to room temp.. Combine them and add sugar & vanilla. Beat until smooth. Spread on cool pumpkin cake.

I have also found that Del Monte can pumpkin taste better than Libby's. But that's just me.
