2 c. cooked mashed eggplant
6 saltine crackers (crushed)
1 beaten egg
3/4 c. milk
1/2 stick butter, melted
1/2 tsp. salt
Grated cheese
Paprika

Directions:
Directions:
Combine all ingredients except cheese and paprika. Pour into casserole dish. Sprinkle generously with grated cheese and paprika. Bake at 350 degrees about 30 to 40 minutes or until firm.
