1 1/4 c. oil 2 c. sugar 2 eggs 1 tsp. vanilla 1 tsp. cinnamon 1 tsp. soda 1/2 tsp. salt 3 c. flour 4 c. peeled and chopped apples 1 c. chopped walnuts Frosting: 8 oz. cream cheese 1 stick margarine 3 1/2 c. powdered sugar 1/2 c. chopped walnuts 1 tsp. vanilla
Mix together all ingredients and place in a 9 x 3 pan. Bake at 325 degrees for 1 hour. Cool for 2 hours. Frosting: Cream margarine and cream cheese until fluffy. Add vanilla and walnuts. Add powdered sugar a little at a time. Keep cake in pan, spreading frosting over top. Cover and store in refrigerator overnight before serving.
