4 c cauliflower florets (or one large bag frozen)
2 tbsp "I Can't Believe It's Not Butter" spray
2 tbsp fat-free half-and-half
pinch of salt
freshly ground black pepper to taste

Directions:

Steam the cauliflower till tender or microwave. Drain and puree with stick blender until smooth. Add the butter spray, half-and-half and seasonings.
