2 pounds fish filets (sole)
salt and pepper
3 Tbls lemon juice
1 cup fine bread crumbs
1/3 pound melted butter
1 recipe seafood dressing

SEAFOOD DRESSING
6 Tbls butter
1/4 cup celery
1/4 cup onion
1/4 cup green pepper
1 can tiny shrimp
1 tsp parsley
1/2 tsp paprika
1 tsp worcheshire sauce
1/2 tsp seafood seasoning
1/8 tsp cayenne pepper
1/4 cup dry sherry
1 1/2 cups breadcrumbs

Cook fish in skillet in one inch of boiling water (3-4 minutes per side)Drain fish then pour 1/4 cup lemon juice over it. Meanwhile saute vegetables in butter; then add all remaining ingredients except for bread crumbs. cook over low heat for about ten minutes then add bread crumbs. Grease casserole then layer fish-dressing-fish; sprinkle with lemon, salt, and pepper. Sprinkle with remaining bread crumbs and melted butter. Bake 375 for thirty minutes.
