4 cups mashed potatoes (can be leftovers)
2 eggs, well beaten
2 T. finely chopped parsley
1/2 onion, finely chopped
1/4 cup pimento, minced
2 tsp. baking powder
flour

Directions:
Directions:
Combine all ingredients and mix well. Flour may be added if needed so potatoes can be shaped. Fritters may be fried like pancakes in a skillet or dropped by spoonfuls into hot grease. If enough flour is added, potatoes can be formed into balls and rolled in crushed cornflakes before frying.
