"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Chocolate Chip Oatmeal Cake, by Jan Lattuca, is from The Clausing Family Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 cup quick oats 1 3/4 cup flour 1 cup sugar 1 tsp. soda 1 cup brown sugar 1/2 tsp. salt 1 stick margarine 3 tsp. cocoa 2 lg. or 3 med. eggs, beaten 12 oz. chocolate chips
In large bowl, pour 1-3/4 cups boiling water over oats and let stand 10 mins. Cream together sugars and margarine and add to oat mixture. Add eggs. Sift together and add dry ingredients. Add half the chips and pour batter into greased 9X13 in. pan. Spread rest of chips over batter. (It also works if you just mix all the chips into the batter.) Bake at 350 degrees for 40 minutes.
