8 oz. cream cheese
1 T lemon juice
1/4 c. chopped onion
1/4 c. chopped celery
1/4 c. chopped cucumber
3/4 c. shredded carrots
1/4 c. chopped bell pepper
2 T margarine
salt and pepper as desired
1/4 c. Duke's mayonnaise or to taste
1 loaf of bread of your choice

Directions:
After chopping each vegetable, drain through a cheese cloth. Squeeze to remove as much liquid as possible.

Mix all the vegetables, margarine, and mayonnaise together. Salt and pepper as desired. Serve on the bread of your choice, and cut in quarters.
