Directions:Dissolve yeast in lukewarm water, add 1Tbs. sugar and let set bubbly. Melt butter and add 2 cups milk, heat until warm. Beat the eggs and yolks and add sugar, beating the eggs and yolks and add sugar, beating until eggs and sugar become thick. Add warm milk with melted butter. Add yeast, mace, salt and lemon rind. Next beat in flour 1 cup at a time. When dough becomes too thick to beat with wooden spoon, turn out on floured boards knead until smooth and silky. Put in greased bowl and let rise in warm place until double in bulk. Turn dough out onto lightly floured board divide into 6 large pieces. Cut each of these large pieces into 12 small pieces. Form into walnut sized balls. (Roll the dough under your hand and form with your palm.) Place on greased baking sheet 2 inches apart and brush each ball with butter. Let rise until almost double in size. Press center and fill with filling. Let rise until light. Bake at 400F about 7 to 10 minutes. Brush kolaches with butter after you take them from the oven. Makes 6
Crumb Topping for Kolaches: Mix all ingredients together (use a pastry blender) until crumbly and use as topping for kolaches or coffee cakes.
Cherry Filling: Mix sugar, cornstarch, and salt. Add juice from cherries. Cook and stir until thick. Add remaining ingredients. Makes enough filling for 3 dozen kolaches.
Poppy Seed Filling: Add water to ground poppy seed and cook until thickened. Add milk and cook slowly for about 10 minutes, being careful that it doesn't’t scorch. Add butter, vanilla and cinnamon, then sugar and continue cooking for about 5 minutes and remove from burner. Add graham cracker crumbs and raisins. Makes enough filling for 3 dozen kolaches. |
