4 c flour
1/4 sugar
1 tsp. salt
1 tsp. baking soda
1/4 c butter
2 c seedless raisins
1 1/3c buttermilk
1 egg
1 tsp. baking powder
2 T caraway seeds

Directions:
Directions:
Mix and sift flour, sugar, salt and baking powder. Cut in butter with a pastry blender until it resembles cornmeal. Stir in raisins. Combine buttermilk, eggs and baking soda. Stir buttermilk mixture into flour mixture until just moistened. Bake in greased 1 quart pudding pan or casserole in 375 degree oven for 45-50 minutes.

For a more cake-like bread, use 4 tsp. baking powder and omit egg; increase sugar to 1/2 cup.
