1 cup water
cup butter or margarine
1 cup flour
4 eggs

Filling:
2/3 cup sugar
tsp. salt
2 tsp. cornstarch
1 Tbs. flour
3 cups milk
3 eggs, separated
2 Tbs. butter
2 tsp. vanilla

Directions:
Directions:
Melt butter in water and bring to a boil, add flour and cook until dough leaves sides of pan about 1 minute. Remove from heat. Add eggs one at a time, beating thoroughly. Drop by tablespoon on cookie sheet. Bake at 425 F for 20 minutes, then at 325 F for 25 to 30 minutes. Makes 18. Cool before filling.

Filling:
Mix sugar, salt, cornstarch, and flour, add milk and cook in double boiler until slightly thickened. Add small amount of hot mixture to egg yolks, then return this to hot mixture, cooking until thick. Remove from heat and add vanilla and butter. Chill. Beat egg whites thick with Tbs. sugar. Fold into cream mixture. Slice puffs horizontally and place a tablespoonful of filing into each.
