2 1/4 cups ripe peaches, finely chopped
1/3 cup maraschino cherries, chopped
1 cup canned crushed pineapple
1/4 cup lemon juice
1 1/2 cups chopped nuts (pecans suggested)
4 1/2 cups sugar
1 bottle Certo (no substitute)

Directions:
Directions:
Measure peaches into a large 6-8 quart kettle. Add cherries, pineapple, lemon juice and nuts. (some prefer sliced almonds). Add sugar all at once to fruit. Mix well and place over high heat.
Bring to a full rolling boil and boil hard for 1 minute, stirring constantly. Remove from heat and at once stir in Certo. Skim off foam. Stir and skim 5 minutes, to prevent fruit from floating. Ladle into glasses or small jars and cover with 1/8 inch hot paraffin. Makes 8 3/4 cups

To serve, spread on bread, crackers or toast. Heated it is good as a topping for ice cream.
