1- to 2lbs. tart cherries
lb. (10 slices) stale white bread
Butter
4 eggs
1 cup milk
cup granulated sugar
1 tsp. vanilla extract
Rum, if desired
Powdered sugar

Directions:
Directions:
Preheat oven to 400F (205C). Butter a souffle dish; set aside. Wash and pit cherries. If canned cherries are used, drain well and pit. Slice bread; spread each slice with butter. Arrange bread and cherries alternately in dish, finishing with a bread layer. Dish should be nearly filled. In a medium bowl, beat together eggs, milk, granulated sugar and vanilla. Pour mixture over bread. Sprinkle rum over pudding for added flavor, if desired. Bake about 50 minutes or until top layer forms a golden crust. Sprinkle powdered sugar over top. Serve warm with custard. Makes 4 servings.
