1 recipe Pie Crust - line 8" pie plate. Fill with

6 to 8 tart apples, peeled, cored, and sliced thin.
Combine:
2/3 to 1 c sugar (depending on tartness of apples)
1/2 tsp. cinnamon 1/4 tsp salt
Speck of nutmeg. Sprinkle over apples.

Dot top of apples w/butter. Arrange top crust and spread w/ a little milk. Prick crust w/fork or make six 1-inch slits near center of crust to allow steam to escape. (place cooky sheet on shelf under pie to save oven from dripping fruit jc.!) Bake @ 425 for 15 min. Then reduce heat to 350 for rest of baking, 20 to 35 min.
